Apple Spice Cake
1/4 cup of each: coconut flour, almond meal, buckwheat flour & quinoi flour.
1/4 t. salt
3/4 t. nutmeg
1 t. baking soda
1 t. cinnamon
2 T. maple syrup
1/2 t. stevia
1 T. Earth Balance
2 T. coconut oil
2 eggs or egg substitute (I use 3 T. flax meal and enough water to make creamy consistency)
2 c. grated apples
1/2 c. chopped dates
Really Raw Honey (optional)
Slivered Almonds (optional)
Mix wet ingredients and dry ingredients together in separate bowls. Stir shredded apples and dates into wet ingredients.
Slowly stir dry ingredients into wet. Pour into oil and floured 9 inch pan and bake in preheated 350 degree oven for 45 minutes. When you take it out of the oven, spread a small amount of the Really Raw Honey on top and sprinkle with slivered almonds.
Sometimes I sprinkle frozen blackberries or blueberries on top and push into batter before baking.
Coffee: Vanilla Nut Teeccino with a little Vanilla Silk and stevia.
